I love trying new recipes, I found this turkey, spinach & pinenut salad in Waitrose. Very quick and delicious winter salad, perfect to rustle up after a long day at work, I have changed the quantities as there are just 2 of us at home and changed the salad cream for low fat mayo.
3 British Turkey breast Escalopes
1/2 tbsp olive oil
grated zest and juice of half a lemon
1/2 teasp ground cumin
50g frozen petit pois
1 tbsp light hellman’s mayonnaise
large handfull baby spinach leaves
25g pine nuts toasted
1. whisk together the oil, lemon zest and juice, cumin, salt & Pepper. Place the turkey in a non-metalic dish and pour over the marinade. Cover and place in the fridge for 30 minutes.
sit down at this point with cup of tea or glass of chilled white wine, as the turkey marinades.
2. cook the peas for 2 minuets, drain and set aside.
3. heat a frying pan, add the turkey and the marinade. Fry for 2 – 3 minuets each side until cooked through, remove from the pan. Add the mayonnaise and 2 tablespoons of water to the pan, stir for 1 minuet. I then added the turkey, peas and spinach back to the pan and combined for 1 minuet, just to wilt the spinach.
4. serve and scatter with toasted pine nuts.
